I have never heard that there were any restrictions on any version 5 or version 6 IE running on Win2k Pro. But you can always roll back an installation that doesn't work, so why not give it a go? IE works fine but crashes occasionally, so I'm wondering if it may be caused by the IE/ntdll.dll versions. I've googled around to see whether those versions are supported on win2k. Microsoft's website seems to indicate that those versions are NOT supported by Win2k.
