Does anyone know how to remove a program from the display list when you go: START: ALL PROGRAMS: I don't want to lose the program itself. I only want to remove it from the display, in effect "hide" it on a joint use machine with. Thanks.

Just right click on the shortcut in the program list and select delete. This removes it from the list but does not delete the program

You could uninstall the program from add remove reboot then reinstall it but this 
time select the option for the currently logged on user only not all users
